Ingredients

5 cups quinoa, cooked
1 cup carrots, chopped
¾ cup parsley, minced
1 cup sunflower seeds
4 cloves garlic, minced
¼ cup extra virgin olive oil
¼ cup tamari (or soy sauce)
½ cup lemon juice
Tomatoes
Black olives

Directions

Cook quinoa and let it cool. Add carrots, parsley, sunflower seeds and garlic. Mix thoroughly. Combine the olive oil, tamari, and lemon juice. Pour this over the quinoa and mix it in. Garnish with tomato wedges and olives.
